Between The Covers

Posted on Jan 13, 2015

My two most recent books I picked up from the library for my upcoming reading pleasure!

I thought that the title to this blog was very apropos given my recent activities and current situation. During this time of recovery from the two surgeries (and especially the spinal fusion), I’ve been truly “between the covers” more now than ever . . . whether I’m referring to my bed or a book!

It’s only January 13th, and I’ve already read three books this year. WHAT??? That’s not like me at all, at least in recent years, BUT IT IS EXACTLY LIKE THE LISA OF MY CHILDHOOD!!! While growing up, I had a voracious appetite for reading, and I just couldn’t wait to retreat to my bedroom or some secluded corner to do so.

I remember in one house that my parents built (they designed and created custom homes), they gave my sister and I a HUGE, LONG room. The last quarter of it was partitioned off with open shelving which ensconced a door frame. In that area were beanbag chairs, a desk, books, and a TV. It was such a gift and a haven wherein I spent hours upon hours locked away with some fantastical tale that swept me away to another world.

This is the library that I would always take Brooke and Ashley to when they were small. When we went back there this morning to get a few books, it was such a sentimental walk down memory lane. <3

Ahhhh, this is one of the joys of my recovery. I’m once again delving into this long, lost love of mine and thoroughly enjoying the opportunity! What did you use to do when you were young that you dearly loved but laid aside as time took its course?

Today . . .

Posted on Dec 18, 2014

Good morning!

Today began at 5:30 AM for me as I had set my alarm for 5:00 AM to take some meds and kept hitting the snooze button. 🙂 I got up and spent some time in the Psalms again. I’ve loved hanging out in that portion of the Bible (up to Psalm 100 now) since coming home (to our house) from the accident. I might just restart them again as soon as I’m done.

Bryan and I will be heading to Hamrick’s this morning in search of a cane we saw on sale for only $14. It stands up on its own, folds, and even has a light on it! Ha . . . whoever thought I’d be extolling the features of a walking cane! I’m pretty sure I’m gonna get red duct tape and make it look like a candy cane. I’ll keep ya posted with the scintillating details on that one!

Today is also cleaning day at our home. Yep, we’ve been here ten days now and haven’t touched nary a broom, dust cloth, or vacuum. It’s time!! Bryan overheard me calling a cleaning company yesterday to get prices, and he quickly informed me that HE would be taking up that task. Yes . . . the man with two broken ribs that are healing and a thumb that still doesn’t work. We shall see how this goes. Y’all pray, okay? Lol!

Ashley is going to come over a bit later as well, and we’re gonna get our “bake on.” Yessirree! She’s going to make her delectable Chocolate Corn Flake Peanut Butter Bars, and I’ll make another batch of the GF Swedish Tea Cakes (see previous post for recipe).

Today I’m also dwelling on Romans 4:17 and calling those things that are NOT as though they ARE in regard to my dear friend, Tonia’s life!!! Please join me in speaking LIFE over her and that more abundantly!

Have a beautiful day today!

Gluten-Free Swedish Tea Cakes

Posted on Dec 16, 2014

We made these little beauties at a recent Christmas baking party . . . and man, oh man . . . they were DELICIOUS!!! I never thought I’d be able to eat these again since going gluten-free, but these were every bit as good as the gluten-filled variety!

Gluten-Free Swedish Tea Cakes

1 cup butter + 3 tbsp. (nobody said these treats were good for you . . . simply gluten-free)

1/2 cup powdered sugar

1 teaspoon salt

1 teaspoon vanilla extract

2 cups Bob’s Red Mill Baking Flour (not to be confused with Bob’s Red Mill All-Purpose Flour)

1 cup finely chopped pecans

Cream butter and sugar well. Add vanilla. In a separate bowl, combine flour, salt, and nuts. Slowly add to butter, sugar, and vanilla. Form 1″ balls. Bake at 350° for ten minutes (they will not turn brown). Carefully remove from cookie sheet and roll in powdered sugar. After the cookies are completely cooled, roll in the powdered sugar one more time. Eat . . . then exercise. 🙂

As The World Turns

Posted on Dec 14, 2014

Well, our lives have taken quite a turn since I last wrote on here to say the least! My husband, my pastor, his son, and I were all in a head-on collision with a water truck in the Dominican Republic on November 5th, 2014.

Screen shot 2014-12-14 at 5.35.09 PM

My husband broke two ribs and punctured his lung. My pastor had some severe breaks in his right leg which resulted in a metal rod, a plate, and screws now being part of his leg. He also hurt his hand and needed blood transfusions. I fractured my L1 (vertebrae), had two broken ribs, a crushed spleen (which they removed and there was an extra one hiding behind the damaged one . . . GLORY TO GOD), a liver contusion, internal bleeding, blood transfusions, and whiplash. This all resulted in two surgeries: 1) an abdominal one to stop the internal bleeding, remove the spleen, suture and put a mesh on the liver, 2) a spinal fusion surgery (L3 – T-11). I now have two rods and ten screws in my back.

We are soooooo very thankful to be ALIVE!!! We have seen God’s hand move so mightily in our lives and are very grateful to Him for all He is doing. We are well on our way to recovery and doing great, glory to God!
